### Baking that has gone wrong without anything failing

Cakes that sink, a top that browns while the middle stays raw, a cavity that takes forty minutes to reach a temperature it says it reached in ten — nothing here is broken in the sense of a part that has stopped. What has drifted is the sensor's reading or the calibration built on top of it, and the only way through is measurement: a probe in the cavity, the door shut, over a full cycle, so the swing is seen and not guessed at. Most of these end in a calibration offset rather than a part.

Ovens can be offset in software; not every complaint needs a part

Measure the cavity properly

A calibrated probe at rack height, through preheat and three cycles of the thermostat. One reading proves nothing.

Test the sensor against its table

Resistance cold and hot for that model, which is what tells a drifting sensor from a drifting control.

Check the door seal and the hinge

A cavity that leaks heat runs cool and cycles constantly with everything else perfect.

Apply the offset where the hardware is sound

These ovens allow a calibration adjustment, and using it is the correct repair for a small consistent error.

Verify with a bake

Because the number that matters is the one at the rack, not the one on the panel.

### My oven thermometer says it is fifty degrees out. Is that the sensor?

It might be the sensor and it might be the calibration, and the two are separated by measuring the sensor's resistance rather than by trusting either number. A cheap dial thermometer hanging from a rack is also worth checking against a second one.

### How much swing is normal in an oven?

More than most people expect. The element cycles, so the real temperature moves either side of the setting, and a swing of twenty-five degrees around the mark is ordinary. It is the average over the cycle that decides whether baking works.
